Ingredients For Tomato Garlic Chicken & Herbs
There are only 5 ingredients in this easy chicken recipe.
- Chicken: I like to use boneless, skinless chicken thighs with this recipe but technically you can use any cut of chicken you want with this recipe. I discuss this below.
- Diced Tomatoes: This recipe has been updated. The old version used 2 cups of sliced cherry tomatoes. It now calls for 15 ounces of canned diced tomatoes.
- Garlic: Feel free to make this as garlicky as you like. I use anywhere between 3 to 4 garlic cloves.
- Dried Herbs: Grab your preferred dried herbs. I used an Italian seasoning blend. Yes, you can use fresh herbs but I think dried works better with slow cooker recipes.
- Chicken Broth: You only need 1/2 cup of broth if you are making this in the slow cooker. With the Instant Pot you will need a full cup in order for the appliance to pressurize & to avoid the burn notice.
- Salt & pepper: Season the chicken with salt & pepper before adding it to the slow cooker or Instant Pot. This is for general flavor. In general, salt & pepper is does not count towards number of ingredients for a recipe if you’re curious as to why.
How To Make Tomato Garlic Chicken & Herbs In The Slow Cooker
This chicken recipe is easy to make when you use the slow cooker or Instant Pot. It’s a true set-it-and-forget-it recipe. Toss all the ingredients in & let it cook.
Slow Cooker
- Season chicken with salt & pepper. Add the chicken to the slow cooker. Add all the other ingredients. Mix until well combined.
- Cook HIGH 2-4 hours or LOW 4-6.
Instant Pot
- Add all ingredients to the pressure cooker. Stir gently to mix. Be sure to use 1 full cup of broth.
- Close lid and seal valve. Set high pressure and cook 9 minutes for thighs, 8 minutes for breasts.
- When cooking time is complete, quick release pressure.
What Cut Of Chicken To Use
I like to use boneless, skin chicken thighs with this recipe but technically you can use any cut of chicken you like. I always tend to use thighs when I slow cooker because they’re less likely to overcook and dry out. If you choose to substitute chicken breasts, you will need to lower the cooking time by an hour or so. Also, do not let the dish sit on the warm setting. When it’s done cooking, turn it off. This will help the chicken stay moist. Trust me, I have overcooked many chicken breasts in the slow cooker and there’s nothing I hate more than dry chicken.
Making This In The Instant Pot
Having made this slow cooker tomato-garlic chicken & herbs recipe in both the slow cooker & Instant Pot, I can honestly say I don’t have a preference. It really just depends on how much time I have. Personally, when I cook skinless chicken in the the Instant Pot, I do not take the time to sauté it first. I only use that function with skin-on chicken. After the recipe has completed cooking time, remove the chicken and shred it. Then place it back in Instant Pot until serving. Whether or not you want to shred the chicken or leave it whole is again up to you. If your meat isn’t tender enough that is shreds easily, keep cooking it until it is.
FAQs & Tips
- When this is done cooking, I like to remove the chicken, shred it and put it back in the slow cooker or Instant Pot. This is an optional step; you can leave it whole if you want.
- To make this recipe I use a large 6-quart slow cooker or Instant Pot.
- You can serve this chicken recipe many different ways. I like to serve this with riced or mashed cauliflower.

I love the idea of the mushrooms. Have you or anyone else ever added rice? Using my crockpot would you suggest I use instant rice? How much extra broth? Since the weather’s hot I won’t shred the chicken. I’m thinking I could also add a handful of okra and corn at the end to change it up some. Something about tomatoes, corn and okra...lol. Thanks!!
