Slow Cooker Tuscan Chicken

Slow cooker Tuscan chicken is a rich, comforting meal that’s easy to make.  Chicken cooks low and slow in a creamy, garlic-infused sauce with sun-dried tomatoes and spinach. This is the kind of recipe that tastes like it came from a restaurant but requires minimal effort thanks to the crockpot. Instructions to make Tuscan chicken in the Instant Pot are also included.

Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 cup sun-dried tomatoes, drained
  • 1/3 cup onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 2 cups fresh spinach, chopped
  • 2 tablespoons arrow root starch or corn starch (optional)
  • 1 tablespoon oil (for Instant Pot only)

Instructions

Slow Cooker

  1. Add the chicken broth, sun-dried tomatoes, onion, garlic, Italian seasoning, salt, pepper, and starch (if using) to the slow cooker. Stir to mix well.
  2. Season the chicken with salt & pepper and add it to the slow cooker.
  3. Cook on HIGH for 2 to 3 hours or LOW 4 to 6.
  4. The last 15 minutes of cooking time, stir in the heavy cream and Parmesan cheese. Add the spinach to the slow cooker before serving.

Instant Pot

  1. Set Instant Pot to sauté mode. Season the chicken with salt and pepper. Add the oil and sear the chicken for 2–3 minutes per side until lightly browned. Remove the chicken and set aside. Add the onion and cook a few minutes until soft. Add garlic and sauté for an additional minute. Turn off sauté.
  2. Pour the broth into the Instant Pot and deglaze the bottom by scraping all the bits off with a wooden spoon.
  3. Add the chicken back to the Instant Pot along with the sun-dried tomatoes, Italian seasoning, salt, pepper, and starch (if using).
  4. Close the lid and seal the valve. Set high pressure and cook 8 to 10 minutes (depending on thickness of chicken). When cooking time is up, quick release the pressure.
  5. Remove the chicken and set aside. Turn the Instant Pot to sauté. Pour in the heavy cream and Parmesan cheese. Simmer for a few minutes or until the sauce is slightly thickened.
  6. Add the chicken back to the Instant Pot. Add the spinach to the Instant Pot before serving.
