Breakfast. It truly is the most important meal of the day. So might as well make it count, right? I try to cook breakfast for myself every single day. It doesn’t always happen but I try. Keeping it creative can be tough sometimes. Luckily I am not one of those women who does not eat bread. I’ll keep it real – I don’t eat a lot of bread. But I will, especially in the morning when I have the entire day to burn it off. This was fun to make.
Which one would you eat?? Clockwise from top left:
#1 – rye toast, almond butter, sliced banana, chia seed
#2 – rye toast, 1/2 mashed avocado, 1 over-hard egg, cracked black pepper
#3 – rye toast, almond butter, blueberries, honey
#4 – rye toast, 1 scrambled egg, 1/2 sliced avocado, red pepper flakes

All except the one with bananas! I can’t get with the texture…
I hear ya. They’re not for everyone. Curious – what would you replace it with? Strawberries perhaps?
