- 1 cup rolled oats
- 2 very ripe bananas
- 1/4 cup unsweetened applesauce OR 1 egg if not vegan
- 3 tbsp pure maple syrup or honey if not vegan
- 1 tsp cinnamon
- 1 tsp vanilla
- 1 tsp baking powder
- Optional: raisins, dried fruit, nuts, etc.
Instructions
- Preheat oven to 375.
- Mash bananas in medium size bowl with fork.
- Add remaining ingredients and mix well.
- Scoop evenly into greased loaf or muffin pan.
- Bake for 20 min. You’ll know it’s done when you insert a tooth pick and it comes out clean.
