Ingredients

  • 2 lbs bone-in, skin-on chicken thighs
  • 1 1/2 lb baby potatoes, quartered
  • 1 lb green beans
  • 1/3 cup for slow cooker, 1 cup for pressure cooker low-sodium chicken broth
  • 2 tbsp rotisserie seasoning (see blog post for homemade)

Instructions

Slow Cooker

  1. Add potatoes to the bottom of the slow cooker. Add chicken on top. Pour broth on top of chicken.
  2. Season chicken and potatoes with rotisserie chicken.
  3. Cook HIGH 2-4 hours or LOW 4-6.
  4. Add green beans. Cook an additional 30 minutes or until green beans are tender.

Instant Pot

  1. Pour in 1 cup chicken broth. Add the potatoes to the bottom of the pressure cooker. Add the chicken thighs on top.
  2. Season chicken and potatoes with rotisserie chicken.
  3. Close lid and seal valve. Set high pressure and cook 10 minutes. Quick release pressure.
  4. Add green beans and cook an additional 2 minutes on high pressure. Quick release pressure.
