Watermelon, feta and blueberry spiced with chili powder & lime juice for a sweet and spicy snack. With red, white and blue, this is great for July 4th.
Pink, white and blue? I guess technically watermelon is pink but close enough. I love watermelon. Love. Hands down my favorite fruit if not my all-time favorite food. It’s a joke with my family and friends how much I eat watermelon. There was a period last summer when I ate one of the mini watermelons daily. Yup, I ate a watermelon a day for about a month straight.
Bobby Parish over at FlavCity has a great video on how to cut a watermelon. I saw it on his Instagram page and I’ve only been cutting my watermelons this way ever since. You can view his video here on his YouTube page. It’s pretty easy to do just watch those fingers when you’re slicing large watermelons. Combining watermelon and feta is nothing new. With fourth of July just a few days away, I tossed in some blueberries for the ‘blue’ aspect. Chili and lime are again, nothing new when it comes to watermelon. I used just a dash but depending on your taste buds use more or less.
I kept this pretty simple but the sky is the limit with what you can add to this: balsamic vinegar, nuts, chocolate chips, chocolate sauce, honey, etc. Pretty much anything you like. The recipe below is just a guideline. If you make this, let me know in the comments what you add.
Watermelon, Feta and Blueberry
- Total Time: 5 mins
- Yield: 6-8 servings 1x
Ingredients
- 4 lb watermelon, sliced
- 1 tbsp chili powder
- 2 tbsp lime juice
- 4–6 ounces blueberries
- 1/4 lb feta, crumbled
Instructions
- Lay watermelon slices flat on baking sheet.
- Top with blueberries and feta cheese.
- Sprinkle chili powder across all the fruit and cheese.
- Splash lime juice evenly across pan over all ingredients
