Ingredients For Slow Cooker Vegetable Tortellini Soup

  • Frozen or Fresh Tortellini
  • Diced Tomatoes
  • Vegetable Broth
  • Water
  • Fresh or Frozen Spinach
  • Carrots
  • Onion
  • Celery
  • Garlic
  • Grated Parmesan Cheese
  • Seasoning: basil, salt, pepper

How To Make Vegetable Tortellini Soup

Slow Cooker

  1. Add all the remaining ingredients except the spinach and tortellini. Stir to mix well.
  2. Cook HIGH 2 to 3 hours or LOW  4 to 6.
  3. The last 10 minutes of cooking time, stir in the spinach and tortellini.

Instant Pot

  1. Add all the except the spinach & tortellini to the Instant Pot. 
  2. Close lid and seal valve. Set high pressure and cook for 25 minutes. When cooking time is complete, quick release the pressure.
  3. Open the lid and stir in the spinach and tortellini.

What is tortellini?

Tortellini is a type of pasta. It is usually stuffed with a eat meat or cheese mixture. 

What type of tortellini should you use?

I use generic brand, frozen tortellini. Whether your tortellini has meat is up to you. Use your favorite kind! What you see in the pictures is a meatless, cheese stuffed tortellini. 

Can you add meat to this?

Sure. Add 1/2 pound of ground meat, sausage, or even poultry to this. If you use a ground meat or sausage, I suggest you brown the meat and drain the grease before you add it to the slow cooker. 

How do you store leftovers?

Store leftover vegetable tortellini soup in the refrigerator for up to 4 days. 

What size slow cooker should you use?

I used a 6-quart slow cooker or Instant Pot.

  • 9 ounces frozen or fresh tortellini
  • 1 cup grated Parmesan cheese
  • 4 cups vegetable or chicken broth
  • 2 cups water (or more broth)
  • 15 ounces diced tomatoes
  • 2 cups fresh or frozen spinach, chopped
  • 2 celery ribs, sliced
  • 2 carrots, peeled & diced
  • 1/3 cup onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon dried basil
  • 1 1/2 teaspoons salt (or more)
  • 1/2 teaspoon pepper

Instructions

Slow Cooker

  1. Add all the remaining ingredients except the spinach and tortellini. Stir to mix well.
