How To Make Vegetable Tortellini Soup
Slow Cooker
- Add all the remaining ingredients except the spinach and tortellini. Stir to mix well.
- Cook HIGH 2 to 3 hours or LOW 4 to 6.
- The last 10 minutes of cooking time, stir in the spinach and tortellini.
Instant Pot
- Add all the except the spinach & tortellini to the Instant Pot.
- Close lid and seal valve. Set high pressure and cook for 25 minutes. When cooking time is complete, quick release the pressure.
- Open the lid and stir in the spinach and tortellini.

Sure. Add 1/2 pound of ground meat, sausage, or even poultry to this. If you use a ground meat or sausage, I suggest you brown the meat and drain the grease before you add it to the slow cooker.

- 1 cup grated Parmesan cheese
- 4 cups vegetable or chicken broth
- 2 cups water (or more broth)
- 15 ounces diced tomatoes
- 2 cups fresh or frozen spinach, chopped
- 2 celery ribs, sliced
- 2 carrots, peeled & diced
- 1/3 cup onion, diced
- 2 garlic cloves, minced
- 1 tablespoon dried basil
