Air Fryer Marinated Portobello Mushrooms

Ingredients

  • 16 ounces portobello mushrooms
Marinade
  • 1/2 cup oil
  • 1/3 cup coconut aminos (or low-sodium soy sauce)
  • 1/4 cup red wine vinegar
  • 1/4 cup lemon juice
  • 1 garlic clove, chopped or minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

Prep The Mushrooms

  1. Damp a paper towel and wipe down each portobello cap.
  2. Cut off the stem & remove the gills. The stem should pull off easily, if not you can cut it off. To remove the gills, hold the mushroom and scoop out the gills with a spoon.

Air Fryer

  1. In a small bowl, mix together the marinade ingredients until well blended.
  2. Add the prepared portobello mushrooms to a large bowl or plastic bag. Pour the prepared marinade on top of the mushrooms. Ensure all the mushrooms are evenly coated. Cover/seal and marinate at room temperature for 30 minutes.
  3. When ready to cook, preheat the air fryer to 350 degrees F.
  4. Remove the mushrooms from the marinade and place in the air fryer basket. It’s okay if the mushrooms slightly overlap, they will reduce in size as they cook. You may need to cook this in batches depending on the size of your air fryer.
  5. Cook 8-10 minutes, flipping halfway through.
