Banana Oat Muffins (Vegan)

Ingredients

  • 1 cup rolled oats
  • 2 medium-size, ripe bananas
  • 1/4 cup unsweetened applesauce
  • 3 tablespoons maple syrup
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1/4 cup vegan chocolate chips (optional)

Instructions

  1. Preheat oven to 375. Grease muffin pan with cooking spray or line with cupcake liners.
  2. In a medium-size bowl, mash the bananas fork. Stir in the remaining ingredients.
  3. Scoop mixture evenly over each muffin tin.
  4. Bake for 20-25 min. You’ll know it’s done when you insert a toothpick in the middle and it comes out clean.
