This crockpot copycat Benihana chicken soup is a homemade version of Benihana’s famous onion soup….with chicken. Cooking this Japanese inspired onion soup in the slow cooker makes this recipe incredibly easy. Add your ingredients and let them simmer throughout the day, infusing the broth with rich flavors from the chicken breasts, onions, celery, carrots, and seasonings. This copycat Benihana soup recipe is not only delicious but also healthy too being low in calories, low-carb, paleo, and Whole30 compatible. Instructions to make this easy chicken soup in the Instant Pot are also included.

Ingredients

  • 1 pound chicken breasts, diced
  • 4 cups low-sodium chicken broth
  • 2 cups beef broth (or water)
  • 8 oz mushrooms, sliced
  • 1 white onion, chopped
  • 2 carrots, chopped
  • 2 celery ribs, chopped
  • 2 garlic cloves, minced
  • 1 1/2 teaspoons salt
  • 1/2 teaspoons pepper
  • 1/4 teaspoon ground ginger
  • 4 green onions, sliced
  • 1/4 cup French onions

Instructions

Slow Cooker

  1. Add the chicken, broth, onion, carrot, celery, garlic, salt, ginger, and pepper to the slow cooker. Stir to mix well.
  2. Cook HIGH for 2-3 hours or LOW 4-6.
  3. Strain out the veggies so only broth and chicken are left in the slow cooker.
  4. To serve, add 2 tablespoons of the sliced mushrooms  to a bowl. Ladle about 1 cup of broth into the bowl. Garnish with a few pieces of the fried onions and green onions.

Instant Pot

  1. Add the chicken, broth, onion, carrot, celery, garlic, salt, ginger, and pepper to the slow cooker. Stir to mix well.
  2. Close lid and seal valve. Set high pressure and cook for 25 minutes. When cooking time is complete, quick release the pressure.
  3. Strain out the veggies so only broth and chicken are left in the Instant Pot.
  4. To serve, add 2 tablespoons of the sliced mushrooms  to a bowl. Ladle about 1 cup of broth into the bowl. Garnish with a few pieces of the fried onions and green onions.
