Crockpot marry me chicken is a creamy, flavor-packed chicken dish that feels a little extra special. Chicken simmers in a rich, cream sauce with sun-dried tomatoes, parmesan, red pepper flakes, and basil. This is the kind of recipe that tastes like it took hours of effort, but the slow cooker does most of the work for you. It’s so good it will make someone want to propose! Instructions to make marry me chicken in the Instant Pot are also included.

Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 8 ounces sun-dried tomatoes, drained & chopped
  • 1/3 cup onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon red pepper flakes
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 1 cup fresh basil, chopped
  • 1 tablespoon oil (for Instant Pot only)

Instructions

Slow Cooker

  1. Add the chicken broth, sun-dried tomatoes, onion, garlic, thyme, salt, and red pepper flakes to the slow cooker. Stir to mix well. Add the chicken.
  2. Cook on HIGH for 2 to 3 hours or LOW 4 to 6.
  3. The last 15 minutes of cooking time, remove the chicken from the slow cooker. Stir in the heavy cream and Parmesan cheese. Add the chicken back to the slow cooker.  Add the basil to the slow cooker before serving.

Instant Pot

  1. Set Instant Pot to sauté mode. Add the oil and sear the chicken for 2–3 minutes per side until lightly browned. Remove the chicken and set aside. Add the onion and cook a few minutes until soft. Add garlic and sauté for an additional minute. Turn off sauté.
  2. Pour the broth into the Instant Pot and deglaze the bottom by scraping all the bits off with a wooden spoon.
  3. Add the chicken back to the Instant Pot along with the sun-dried tomatoes, thyme, salt, and red pepper flakes.
  4. Close the lid and seal the valve. Set high pressure and cook 8 to 10 minutes (depending on thickness of chicken). When cooking time is up, quick release the pressure.
  5. Remove the chicken and set aside. Turn the Instant Pot to sauté. Pour in the heavy cream and Parmesan cheese. Simmer for a few minutes or until the sauce is slightly thickened.
  6. Add the chicken back to the Instant Pot. Add the basil to the Instant Pot before serving.
