Crockpot roast pork is a simple one-pot pork meal that can be served any day of the week. Pork cooking slowly in a crockpot allows the flavors to meld together, resulting in a succulent and mouthwatering dish that’s perfect for any occasion. From busy weeknights to special occasions, this satisfying pork roast is always appropriate. Instructions to make this easy pork recipe in the Instant Pot are also included.

Ingredients

Units Scale
  • 3-4 pound pork shoulder or butt
  • 1 1/2 pound potatoes, peeled & chopped
  • 1 pound carrots, chopped
  • 1 small onion, chopped
  • 1 cup low-sodium chicken broth
  • 1 tablespoon dried thyme
  • 2 teaspoons salt (or more)
  • 2 teaspoon dried rosemary
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon pepper
  • 1 tablespoon oil (for Instant Pot)

Instructions

Prep The Pork

In a small bowl, mix together the thyme, rosemary, garlic powder, onion powder, salt, and pepper. Rub the seasoning evenly all over the pork on all sides.

Slow Cooker

Optional step – Heat oil in a large skillet over medium-high heat. Once hot, add the prepared pork (see above) and cook a few minutes on both sides until browned.

  1. Add the potatoes, carrots, and onion to the slow cooker. Pour the broth on top. Add the prepared, seasoned pork roast on top of the food.
  2.  Cook HIGH 4-5 hours or LOW 8-10.
  3. Remove the pork from slow cooker. Shred the meat and place back into the slow cooker until ready to serve.

Instant Pot

    1. Turn the Instant Pot to sauté. Once hot, add the oil and the prepared pork. Cook 3-5 minutes on each side or until the pork is browned. You may need to cut the pork to make the meat fit.
    2. Remove pork from the Instant Pot. Pour in the broth and deglaze the bottom of the pressure cooker by scraping the bits off with a wooden spoon.
    3. Add the pork back to the pot.
    4. Close lid and seal valve. Set high pressure and cook 20 minutes per pound of pork. When cooking time is complete, quick release the pressure. Add the potatoes, onion, and carrots.
    5. Close lid and seal valve. Set high pressure and cook 3 minutes. When cooking time is complete, let the pressure release naturally.

Notes

You may need to cook this for more or less time depending on the cut of pork you use.
