Crockpot Scalloped Potatoes and Ham

Crockpot scalloped potatoes and ham is a rich, comforting side dish made completely from scratch. Thinly sliced potatoes slow cook low in a creamy, cheesy sauce with ham.  Unlike traditional versions that use canned soup, this recipe uses simple ingredients to create a smooth, homemade sauce right in the slow cooker. This is the perfect dish for holidays, family dinners, or using up leftover ham.

Ingredients

  • 3 pounds russet potatoes, sliced 1/4" thick
  • 2 cups cooked ham, diced
  • 1/2 cup onion, sliced or diced
  • 1/2 cup grated Parmesan cheese
  • 3 cups cheddar cheese (reserve 1 cup for topping)
  • 1 1/2 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 2 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt (or more)
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme

Instructions

Slow Cooker

  1.  Spray the slow cooker generously with cooking spray.
  2. In a small bowl, mix together 2 cups of the cheddar cheese and the Parmesan cheese.
  3. Add half of the potatoes to the slow cooker in an even layer. Add half the cheddar cheese/Parmesan cheese mixture, half of the onion, and half of the ham. Repeat the layers with the remaining potatoes, cheddar cheese/Parmesan cheese, onion, and ham.
  4. In another bowl, mix together the heavy cream, chicken broth, cornstarch, garlic powder, salt, pepper, thyme, and paprika. Pour the  mixture evenly over all of the food in the slow cooker.
  5. Cook on HIGH for 3 to 4 hours or LOW 6 to 8. The last 30 minutes of cooking time, add the remaining 1 cup of cheddar cheese. You may need more or less time depending on how this your potatoes are & how well your slow cooker heats.
  6. Let cool slightly before serving.

Notes

You will know this is done when the potatoes are tender and the sauce is bubbling.
