Slow cooker tomato garlic chicken & herbs is an easy & healthy chicken recipe the entire family will enjoy.  There are less than 5 ingredients in this garlicky slow cooker recipe. You can also make this chicken dish in the Instant Pot.

Ingredients

Units Scale
  • 2 pounds boneless, skinless chicken thighs or breasts
  • 15 ounces diced tomatoes in juices
  • 1/2 cup low-sodium chicken broth for slow cooker, 1 cup for Instant Pot
  • 4 garlic cloves, minced
  • 2 tablespoons Italian seasoning or your favorite dried herb
  • 1 teaspoon garlic salt (or regular salt)
  • 1/4 teaspoon pepper
  • Salt & pepper to season the chicken

Instructions

Slow Cooker

  1. Season chicken with salt & pepper. Add the chicken to the slow cooker. Add all the other ingredients. Mix until well combined.
  2. Cook HIGH 2-3 hours or LOW 4-6.

Instant Pot

  1. Add all ingredients to the pressure cooker. Stir gently to mix. Be sure to use 1 full cup of broth.
  2. Close lid and seal valve. Set high pressure and cook 9 minutes for thighs, 8 minutes for breasts.
  3. When cooking time is complete, quick release pressure.
