Baked shrimp boil casserole is an alternative way of cooking a shrimp boil…in the oven. This tasty seafood casserole comes together quickly and can be tailored to your liking. Using just a few ingredients, this baked shrimp boil casserole is a family friendly meal that can be served any day of the week.

Ingredients

  • 1 pound shrimp, deveined
  • 1 pound red potatoes, chopped or sliced depending on the size
  • 14 ounces Andouille sausage, sliced into 1-inch rounds
  • 1 small onion, diced
  • 15 ounces corn, drained & rinsed
  • 3 teaspoons + 2 teaspoons Old Bay Seasoning
  • 1 teaspoon garlic powder
  • 1/2 cup butter, melted
  • 1 tablespoon oil

Instructions

  1. Preheat oven to 375 degrees
  2. Spray a casserole dish with cooking spray.
  3. Add to the following ingredients to bottom of the casserole dish in this order: red potatoes, sausage, onion, corn.
  4. In a small bowl, melt the butter. Add the garlic powder and 3 teaspoons of Old Bay. Stir to mix well. Pour the mixture evenly over the food.
  5. Cover with foil and cook 30-40 minutes or until the potatoes are tender.
  6. Season the shrimp with the oil and 2 teaspoons of Old Bay. Remove the foil and add the seasoned shrimp on top of the food. Cook uncovered 10-15 minutes or until shrimp are cooked through.
  7. Garnish with lemon before serving.
