Crockpot banana blueberry French toast is an easy casserole that cooks with minimal effort in the slow cooker! Perfect for holidays, Sunday brunch, special occasions, busy weekdays, or even dessert, this easy breakfast casserole will impress your guests.

Ingredients

  • 1 loaf day-old, stale French bread, broken up into pieces (approximately 12 ounces)
  • 7 large eggs
  • 2 cups milk of your choice
  • 2 ounces blueberries
  • 1 banana, sliced
  • 1 banana, mashed
  • 1/2 cup maple syrup, honey, or sugar of you choice
  • 1 teaspoon cinnamon
  • 1 teapoon vanilla extract

Instructions

Slow Cooker

  1. Spray the slow cooker generously with cooking spray.
  2. Add the cubed French bread to the slow cooker. Top with the sliced banana and the blueberries.
  3. In a small bowl, whisk together the eggs, mashed banana, milk, vanilla, cinnamon, and your preferred sweetener. Pour the mixture over the bread in the slow cooker.
  4. Cook HIGH 2-3 hours or LOW 4-6. Let the French toast cool before removing the slow cooker.
