This slow cooker bean free chili has the flavors of a traditional chili minus a main ingredient – beans. Bean-free chili offers a tasty alternative for people with dietary restrictions or preferences…or just looking to go bean free! Using simple ingredients and a homemade chili seasoning blend, this low-carb, paleo, and Whole30 compatible chili will soon be household favorite. Instructions to make this bean free chili in the Instant Pot are also included in the blog post.

Ingredients

  • 1 pound ground beef
  • 1 pound ground sausage
  • 1/2 cup onion, diced
  • 2 bell peppers, diced
  • 3 garlic cloves, minced
  • 4 ounces diced green chiles
  • 24 ounces diced tomatoes
  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 1/2 teaspoons paprika
  • 1 1/2 teaspoons salt
  • 1 teaspoon oregano
  • 1/4 teaspoon pepper
  • 1 tbsp oil (or more)
  • 1/2 beef broth or water (for Instant Pot only)

Instructions

Slow Cooker

  1. Add oil to a large pan over medium-high heat. Add ground beef & sausage to pan and cook a few minutes until meat is browned. Drain excess grease. Add meat to the slow cooker.
  2. Add all the remaining ingredients to the slow cooker. Stir to mix well.
  3. Cook HIGH 3-4 hours, LOW 6-8.

Instant Pot

  1. Turn the Instant Pot on and select sauté. Once hot, add the oil, ground beef, ground  sausage, bell pepper, and onion. Cook 5-7 minutes or until the meat is browned and vegetables soft. Crumble the meat as it cooks. Drain the grease if needed.
  2. Add all the remaining ingredients. Be sure to add the 1/2 cup beef broth or water. Stir to mix well.
  3. Close lid and seal valve. Set high pressure and cook for 20 minutes. When cooking time is complete, quick release the pressure.
