Ingredients

  • 1 1/2 pounds beef, sliced thinly
  • 4 ounces udon noodles, uncooked
  • 1 cup chopped bok choy or spinach
  • 1/2 cup carrots, shredded or diced
  • 1/3 cup onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium beef broth
  • 2 cups water
  • 1/4 cup low-sodium soy sauce
  • 1 1/2 teaspoons ground ginger
  • 1/2 teaspoon salt (or more)
  • 1/4 teaspoon pepper
  • 2 green onions, sliced (for garnish)

Instructions

Slow Cooker

  1. Add all ingredients EXCEPT the udon noodles & bok choy/spinach to the slow cooker. Stir to mix well.
  2. Cook on HIGH for 2 to 3 hours or LOW 4 to 6.
  3. Add udon noodles and the bok choy/spinach. Cook an additional 15 minutes or until the noodles are soft.

Instant Pot

  1. Add all ingredients except the udon noodles & bok choy/spinach into the Instant Pot. Stir to mix well.
  2. Close the lid and seal the valve. Set high pressure and cook for 25 minutes.
  3. When cooking time is complete, quick release the pressure.
  4. Set Instant Pot to the high sauté setting. Stir in the udon noodles and bok choy/spinach. Cook an additional 10 minutes or until the noodles are soft.
