Slow Cooker Beef Udon Soup

don soup is a classic Japanese noodle soup. This slow cooker version uses a homemade broth, tender slices of beef, and thick udon noodles.

Ingredients

  • 7.25 ounces pre-cooked udon noodles
  • 1 lb beef, sliced thinly
  • 6 cups low-sodium beef broth
  • 1/4 lb bok choy
  • 4 ounces enoki mushrooms
  • 1/4 lb snow peas
  • 3 garlic cloves, minced
  • 2 tbsp fresh ginger, peeled & cut into large chunks
  • 1/4 rice wine vinegar
  • 1 tbsp low-sodium soy sauce
  • 1/2 tsp salt
  • Garnish: egg, green onion, shredded carrot.

Instructions

  1. Add all ingredients EXCEPT the udon noodles to the slow cooker.
  2. Stir to mix well.
  3. Cook HIGH 2-3 hours or LOW 4-6.
  4. Add udon noodles and cook an additional 5-10 minutes or until warmed through.
