Crockpot Leftover Cajun Turkey and Sausage Soup

Crockpot Cajun turkey sausage soup is a flavorful and comforting soup that uses leftover turkey (or chicken).  Using Cajun seasonings, Andouille sausage, and the holy trinity of cooking, this easy soup recipe will impress any crowd. The best part…it’s even better the next day!  Instructions to make this easy soup in the Instant Pot are also included.

Ingredients

  • 3/4 - 1 pound leftover cooked turkey (or chicken), chopped or shredded
  • 14 ounces andouille sausage, cut into 1-inch rounds
  • 1 tablespoon Cajun seasoning (if your Cajun seasoning doesn't have salt, add 1 teaspoon salt)
  • 3 cups low-sodium chicken broth
  • 15 ounces diced tomatoes
  • 1/2 cup onion, diced
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 celery stalk, sliced
  • 1 tablespoon oil (for Instant Pot)

Instructions

Slow Cooker

  1. Add all the ingredients to the slow cooker. Stir to mix well.
  2. Cook HIGH 2-3 hours or LOW 4-6.

Instant Pot

  1. Turn on the pressure cooker and select sauté. Once hot, add the add oil to the pot. Add onion, bell pepper, celery and cook 3-5 minutes or ,until veggies begin to soften.
  2. Add the broth & deglaze the bottom of the pressure cooker by scraping all the bits off with a wooden spoon.
  3. Add leftover turkey, andouille sausage, diced tomatoes, and Cajun seasoning. Stir to mix well.
  4. Select manual setting, high pressure for 20 minutes. When cook time is done, quick-release the pressure.
