This copycat Chipotle carnitas recipe is just as good as the restaurants! Made in the slow cooker it's more cost affordable while being healthy too. Being low-carb, paleo, whole30, keto and more, you can use this carnitas meat in so many ways.

Slow Cooker Copycat Chipotle Carnitas

Ingredients

Units Scale
  • 3 pounds pork shoulder
  • 1 cup low-sodium chicken broth
  • 2 teaspoons salt
  • 1 tsp black pepper
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • 1 large sprig of fresh rosemary

Instructions

  1. Season pork with salt & pepper and add to the slow cooker.
  2. Add thyme, bay leaves and broth to the slow cooker.
  3. Add rosemary spring into the slow cooker.
  4. Cook HIGH 3-4, LOW 6-8.
  5. Remove rosemary spring and bay leaves
  6. Remove meat from the slow cooker and shred. Place back in the slow cooker until ready to use.

Optional step – lay the shredded meat flat on a baking sheet and BROIL 3-5 minutes or until crisp.
