This easy crockpot chicken tacos recipe only has 4 ingredients: chicken, taco seasoning, diced tomatoes, and green chiles. Packed with flavor, this low-carb, paleo, and Whole30 compatible tacos recipe can be served however you please whether it be in tortillas or lettuce wraps.

Ingredients

Units Scale
  • 3 pounds boneless, skinless thighs
  • 15 ounces diced tomatoes with juices
  • 4 ounces diced green chiles
  • 1/2 cup low-sodium chicken broth (for Instant Pot only)
Homemade Taco Seasoning
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoon cumin
  • 1 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes

Instructions

Slow Cooker

  1. Add all the ingredients to the slow cooker. Stir to mix well.
  2. Cook HIGH 2-3 hours or LOW 4-6.
  3. Remove chicken from the slow cooker & shred. Stir the chicken back into the slow cooker.

Instant Pot

  1. Add all the ingredients to the pressure cooker. Stir to mix well.
  2. Close lid and seal valve. Set high pressure and cook 8 minutes for fresh chicken or 12 minutes if your chicken is frozen. When cooking time is complete, quick release the pressure.
  3. Remove chicken from the pressure cooker & shred. Stir the chicken back into the Instant Pot.
