This slow cooker corned beef hash is a comforting &  hearty meal that’s perfect for breakfast, brunch, or even dinner. This recipe is especially great for using up leftover corned beef, making it a perfect follow-up meal after St. Patrick’s Day. Using the slow cooker makes this version incredibly easy; just add the ingredients and let the crockpot do the work!

Ingredients

  • 3/4 pound corned beef (cooked)
  • 1 pound russet potatoes, peeled & diced
  • 1/2 cup onion, diced
  • 1/2 cup beef broth
  • 1 1/2 teaspoons dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons butter (optional)

Instructions

  1. Spray the slow cooker with cooking spray.
  2. Add the potatoes, corned beef, onion, seasonings (parsley, salt, pepper, onion powder), and beef broth. Add the butter on top (if using).
  3. Cook on HIGH for 2 to 3 hours or LOW 4 to 6.
  4. Stir before serving.
