Crockpot 5 Ingredient pot roast is an simple yet delicious beef roast recipe that only has…5 ingredients. When it comes to comfort food, few dishes can rival the a perfectly cooked beef pot roast. Normally it’s a labor-intensive endeavor to cook a tender roast but with the magic of the slow cooker, there’s minimal effort on your part required. The slow cooker method allows you to transform any cut of beef into a melt-in-your-mouth masterpiece. The slow cooker does the heavy lifting while you sit back and let the aroma fill your kitchen! Instructions to make this easy pot roast recipe in the Instant Pot are also included.

Ingredients

  • 2-3 pounds beef roast (cut of your choice), seasoned with salt and pepper
  • 1 pound potatoes
  • 3/4 pound carrots
  • 3 to 4 tablespoons steak seasoning (see below for homemade blend)
  • 1 cup beef broth
  • 1 tablespoon oil (optional for slow cooker)
  • salt and pepper to taste
Homemade Steak Seasoning
  • 3 teaspoons salt (or more)
  • 2 teaspoon paprika
  • 2 teaspoon pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon teaspoon dried parsley
  • 1 teaspoon ground or dried coriander
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes

Instructions

Prep The Beef 

Rub the steak seasoning evenly all over the beef roast on all sides. If you are using my homemade steak seasoning, first mix together all the ingredients in a small bowl.

Slow Cooker

Optional step: Heat oil to a large skillet over medium heat. Add the prepared beef (see above) and sear a few minutes each side.  

  1. Pour the beef broth into the bottom of the slow cooker.
  2. Add the prepared beef (see above) to the slow cooker. Add the potatoes and carrots on top of the roast.
  3. Cook HIGH 4-5 hours or LOW 8-10.

Instant Pot

  1. Turn the Instant Pot to sauté. Once hot, add the oil and the prepared beef (see step above). Cook 3-5 minutes on each side or until beef is browned. You may need to cut the beef to make the meat fit.
  2. Remove the beef from the Instant Pot. Pour in beef broth and deglaze the bottom of the pressure cooker by scraping the bits off with a wooden spoon.
  3. Add the beef back to the pot.
  4. Close lid and seal valve. Set high pressure and cook 45 minutes. When cooking time is complete, quick release the pressure. Add the potatoes and carrots.
  5. Close lid and seal valve. Set high pressure and cook 3 minutes. When cooking time is complete, let the pressure release naturally.

Notes

Instant Pot cook time will depend on how big your roast is and how your pressure cooker heats.

For the Instant Pot, you an cook your beef from frozen. If you’re using a frozen roast, skip the searing/browning step. Add the roast to the pressure cooker, add seasoning & broth on top.
