Slow cooker eye of round roast is a no-fuss meal that cooks itself. Using simple ingredients like budget-friendly round roast, potatoes, carrots, and a tomato-based broth, this one-pot roast beef dinner is perfect for any night of the week. Instructions to make this easy eye of round roast in the Instant Pot are also included.

Ingredients

  • 3 pound eye of round roast, fat trimmed
  • 1 cup beef broth
  • 15 ounces crushed tomatoes
  • 4 small russet potatoes, peeled & chopped (approximately 1 pound)
  • 1 pound carrots, chopped
  • 2 teaspoons salt
  • 1 1/2 teaspoons onion powder
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons dried parsley
  • 1/2 teaspoon pepper
  • 1 tablespoon oil (for Instant Pot only)

Instructions

Slow Cooker

  1. Add the beef broth and crushed tomatoes to the slow cooker. Give it a quick stir.
  2. Season the beef evenly all over with the salt, pepper, garlic powder, onion powder, and parsley. Add the seasoned beef to the slow cooker.
  3. Add the potatoes and carrots to the slow cooker around the beef.
  4. Cook HIGH for 4 to 5 hours or LOW 8 to 10.

Instant Pot

  1. Turn on the pressure cooker and select sauté. Add the oil. Season the beef evenly all over with the salt, pepper, garlic powder, onion powder, and parsley. Once hot, add the beef and sear evenly, approximately 2 to 3 minutes on each side. Remove the beef from the Instant Pot and set aside. Turn off the Instant Pot.
  2. Pour in the broth & crushed tomatoes water and deglaze the bottom of the by scraping all the bits off with a wooden spoon. Add the beef back to the pot.
  3. Close lid and seal valve. Set on high pressure setting for 50 minutes. When cooking time is complete, quick release the pressure.
  4. Add the potatoes and carrots.  Close lid and seal valve. Set on high pressure setting for 3 minutes. When cooking time is complete, quick release the pressure.
