This slow cooker ground turkey bowl is an easy one-pot recipe that is loaded with veggies, broth, potatoes, and simple seasonings. Ingredients

  • 1 1/2 pounds ground turkey
  • 1 pound potatoes, peeled & chopped
  • 1 cup low-sodium chicken broth
  • 1 tablespoon dried thyme
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 red bell pepper
  • 1/2 pint cherry tomatoes
  • 1 carrot, peeled & sliced
  • 1/3 cup onion, diced
  • 1 zucchini, sliced
  • 4 ounces mushrooms
  • 1 tablespoon oil

Instructions

Slow Cooker

  1. Heat oil in a large skillet. Once hot, add the ground turkey. Cook 5-7 minutes or until the ground turkey is no longer pink. Crumble the meat as it cooks. Drain the grease and add the turkey to the slow cooker.
  2. Add all the remaining ingredients. Stir to mix well.
  3. Cook HIGH for 2 to 3 hour or LOW 4 to 6.

Instant Pot

  1. Turn on the pressure cooker and select sauté. Add the oil. When hot, add the ground turkey, carrots, bell pepper, mushrooms, and onion. Cook 5-7 minutes, crumbling the ground turkey as it cooks. Add the garlic and cook an additional minute. Drain the fat from the Instant Pot if needed.
  2. Stir in all remaining ingredients. 
  3. Close lid and seal valve. Set high pressure and cook for 10 minutes. When cooking time is complete, quick release the pressure.

Notes

Every appliance heats differently. You will know this is done when the potatoes are soft.
