Ingredients

Units Scale
  • 2 cups cooked ham, diced
  • 4 large russet potatoes, peeled and cubed
  • 1 small onion, diced
  • 3 carrots, peeled and sliced
  • 3 celery ribs, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons cornstarch or arrowroot starch
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

Slow Cooker

  1. Add the diced ham, potatoes, cornstarch, onion, carrots, celery, thyme, salt, pepper, and broth to the slow cooker. Stir to mix well.
  2. Cover and cook on HIGH for 3 to 4 hours or on LOW for 6 to 8 hours, or until the potatoes and carrots are tender.
  3. Stir in the heavy cream.
  4. Cover and cook for an additional 10 to 15 minutes, or until the cream is heated through.
  5. Taste the soup and add additional salt or pepper if needed.

Instant Pot

  1. Add the ham, potatoes, onion, carrots, celery, 3 1/2 cups of the chicken broth, thyme, salt, and pepper to the Instant Pot. Stir to combine.
  2. Close and seal the lid. Cook on high pressure for 5 minutes.
  3. When the cooking time is complete, allow the pressure to release naturally for 5 minutes. Carefully release any remaining pressure.
  4. In a small bowl, whisk the cornstarch or arrowroot starch with the remaining 1/2 cup of chicken broth until smooth.
  5. Open the lid and set the Instant Pot to sauté. Stir the starch mixture into the soup.
  6. Cook for 2 to 3 minutes, stirring frequently, until the broth begins to thicken.
  7. Turn off the Instant Pot and stir in the heavy cream. Let the soup sit on the warm setting for approximately 5 minutes, or until heated through.
  8. Taste and add additional salt or pepper if needed. Serve warm.
