Ingredients

  • 2 1/2 lbs chicken thighs, boneless & skinless, cut into pieces
  • 1 lb. potatoes or sweet potatoes, peeled & diced
  • 2 cups low-sodium chicken broth
  • 34 whole roma tomatoes
  • 1 cup tomato sauce
  • 1/2 lb. zucchini, diced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 1/2 tsp curry powder
  • 1 1/2 tsp cumin
  • 1 1/2 tsp ginger
  • 1 1/2 tsp turmeric
  • 1 tsp salt
  • 1 tsp coriander
  • 1/2 tsp cayenne
  • Handful parsley, chopped (garnish)

Instructions

  1. Add all ingredients to the slow cooker.
  2. Stir to mix well.
  3. Cook HIGH 2-3 hours or LOW 4-6.
