4-5 orange bell peppers (depending on size)
- 15 ounces diced tomatoes
STUFFING
- 1 pound ground meat
- 15 ounces diced tomatoes
- 1 1/4 cups cauliflower, riced
- 1/2 cup onion, diced
- 1 garlic clove, minced
- 1 tablespoon Italian seasoning (or another dried herb)
- 1 1/2 teaspoons salt (or more)
- 1/2 teaspoons pepper
Instructions
- Spray the inside of your slow cooker with cooking spray. Add 15 ounces of diced tomatoes to the bottom.
- In a large bowl, mix together stuffing ingredients.
- Slice the top off of each bell pepper and remove the inside veins and seeds. Reserve the top for later Using a small knife, carefully cut triangles for eyes and a mouth for the jack-o-lantern. Spoon the filling equally into each bell pepper until they’re all full.
- Cover with the top of the bell pepper and add bell peppers into the slow cooker.
- Cover HIGH for 3-4, LOW 6-8 hours or until the meat is cooked through.
