This crockpot jack-o-lantern stuffed peppers recipe is an easy way to add some Halloween fun to your dinner table. This healthy slow cooker version uses cauliflower rice to make this low-carb, paleo and Whole30 compatible. Using the slow cooker to cook stuffed peppers means you get a tasty, stress-free meal…that won’t break your diet.

Ingredients

4-5 orange bell peppers (depending on size)

  • 15 ounces diced tomatoes

STUFFING

  • 1 pound ground meat
  • 15 ounces diced tomatoes
  • 1 1/4 cups cauliflower, riced
  • 1/2 cup onion, diced
  • 1 garlic clove, minced
  • 1 tablespoon Italian seasoning (or another dried herb)
  • 1 1/2 teaspoons salt (or more)
  • 1/2 teaspoons pepper

Instructions

  1. Spray the inside of your slow cooker with cooking spray. Add 15 ounces of diced tomatoes to the bottom.
  2. In a large bowl, mix together stuffing ingredients.
  3. Slice the top off of each bell pepper and remove the inside veins and seeds. Reserve the top for later Using a small knife, carefully cut triangles for eyes and a mouth for the jack-o-lantern. Spoon the filling equally into each bell pepper until they’re all full.
  4. Cover with the top of the bell pepper and add bell peppers into the slow cooker.
  5. Cover HIGH for 3-4, LOW 6-8 hours or until the meat is cooked through.
