This slow cooker  Mississippi chicken is a cleaner, healthier version of the classic recipe. All the bold flavor you like but skips the store-bought packets in favor of simple, homemade seasonings. A DIY ranch blend and a homemade au jus-style seasoning keeps this recipe low-sodium, low-carb, paleo, and Whole30 compatible…without sacrificing taste. Instructions to make Mississippi chicken in the Instant Pot are also included.

Ingredients

  • 3 pounds boneless, skinless chicken thighs
  • 6 pepperoncini peppers
  • 2 tablespoons dry ranch seasoning (see below for homemade)
  • 1 1/2 tablespoons au jus gravy (see below for homemade)
  • 3 tablespoons ghee or butter
  • 1 cup low-sodium chicken broth
Homemade Dry Ranch Mix
  • 2 teaspoons dried parsley
  • 1 1/2 teaspoons dried dill
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon pepper
Homemade Au Jus Gravy
  • 1 1/2 teaspoons chicken bouillon powder
  • 1 1/2 teaspoons cornstarch
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon black pepper

Instructions

Slow Cooker

  1. Pour the broth into the slow cooker. Add the chicken on top.
  2. In a small bowl, mix together the homemade dry ranch & homemade au jus gravy . Pour the mixture into the bowl on top of the chicken.
  3. Add pepperoncini and butter on top of the chicken.
  4. Cook HIGH for 2 to 3 hours or LOW 4 to 6.
  5. Remove chicken from slow cooker, shred, and place back in the slow cooker until ready to serve OR serve the chicken pieces whole.

Instant Pot

  1. Pour broth into the Instant Pot. Add the chicken on top.
  2.  In a small bowl, mix together the homemade dry ranch & homemade au jus gravy. Pour the mixture into Instant Pot on top of the chicken.
  3. Add pepperoncini and butter on top of the chicken.
  4. Close and seal vent. Select high pressure for 12 minutes. When cooking time is complete, quick release the pressure.
  5. Remove chicken from Instant Pot, shred, and place back in the pressure cooker until ready to serve OR serve the chicken pieces whole.
