This crockpot prosciutto wrapped chicken recipe only has a few ingredients but is packed with flavor. Low-carb, paleo, and Whole30 compatible, this healthy chicken recipe will impress any crowd. The flavors of prosciutto is pairs with chicken and capers to make for a winning combo.

Ingredients

  • 4 thin slices of prosciutto (approximately 3-ounces total)
  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1 cup chicken stock or broth
  • 3 tablespoon capers
  • 1 1/2 teaspoons dried rosemary

Instructions

Slow Cooker

  1. Pour the chicken broth into the slow cooker.
  2. Wrap 1 slice of prosciutto around each chicken breast.  Secure with a toothpick if needed. Place the wrapped chicken into the slow cooker. Sprinkle the  capers and rosemary on top.
  3. Cook HIGH 2-3 hours or LOW 4-6.
  4. Discard toothpicks before serving.
