Slow cooker pumpkin spice latte is a warm and comforting fall beverage made with strong coffee, almond milk, real pumpkin, maple syrup, vanilla, and pumpkin pie spice. This easy big-batch drink is naturally dairy-free and contains no refined sugar. It is perfect for fall brunches, Halloween parties, Thanksgiving gatherings, or any chilly day when you want a cozy homemade coffee drink. Instructions for Instant Pot pumpkin spice latte are also included.

Ingredients

Units Scale
  • 4 1/2 cups brewed strong coffee
  • 3 cups almond milk or another milk of your choice
  • 1 cup pure pumpkin puree (not pumpkin pie mix)
  • 1/3 cup maple syrup (or honey)
  • 1 teaspoon vanilla
  • 1 1/2 teaspoons pumpkin pie spice

Instructions

Slow Cooker

  1. Add all the ingredients to the slow cooker. Whisk until well combined.
  2. Cook on HIGH for 2 hours or LOW for 4 hours, or until the latte is hot. Stir occasionally if possible, and do not allow the mixture to boil.
  3. Whisk well before serving. If desired, pour the latte through a fine-mesh strainer to remove sediment.
  4. Reduce the slow cooker to WARM for serving. Ladle the latte into mugs and add your preferred toppings.

Instant Pot

  1. Add the ingredients to the Instant Pot. Whisk until well combined.
  2. Slowly whisk in the almond milk and brewed coffee.
  3. Select SAUTÉ and use the LOW setting, if available. Heat uncovered for 5 to 10 minutes, stirring frequently, until hot. Do not boil.
  4. Turn off the Sauté function. Whisk well and strain if desired.
  5. Select KEEP WARM for serving. Ladle the latte into mugs and add your preferred toppings.

Notes

*Pressure cooking is not necessary because all the ingredients are already cooked or ready to consume. Gently heating the latte also reduces the chance that the almond milk will separate.
