Slow cooker Reuben casserole has all the flavors of the classic deli sandwich…but in casserole form. This casserole is especially perfect for using up leftover corned beef, making it a perfect meal after St. Patrick’s Day or any corned beef dinner. With just 5 simple ingredients, it’s easy to assemble and lets the crockpot do all the work while the flavors meld together into a warm, cheesy, satisfying meal.

Ingredients

  • 1/2 pound cooked corned beef
  • 4 slices rye bread, toasted & torn into pieces
  • 8 ounces sauerkraut, rinsed & drained of excess liquid
  • 8 ounces thousand island or Russian dressing
  • 6 slices Swiss cheese, torn into pieces

Instructions

  • Spray the slow cooker generously with cooking spray.
  • Add the toasted rye bread to the bottom. Top with the cooked corned beef, spread the  sauerkraut on top, then spread the dressing, and top with the Swiss cheese.
  • Cook on LOW for 2 to 3 hours.
