Slow Cooker Salsa Beef Stew

Slow cooker salsa beef stew is an flavorful stew that with simple ingredients. Tender chunks of beef slow cook to perfection in a brothy salsa with veggies, black beans, corn, seasonings, and more. Using your favorite store-bought or homemade salsa, this comforting Mexican inspired beef stew is even better the next day. Instructions to make this easy beef recipe in the Instant Pot are also included.

Ingredients

  • 2 pounds beef, cut into 2-inch pieces
  • 16 ounces salsa
  • 1 cup beef broth
  • 1/2 cup onion, diced
  • 2 garlic cloves, minced
  • 1 bell pepper, diced
  • 15-ounce can black beans, drained & rinsed
  • 15-ounce can corn, drained & rinsed
  • 1 1/2 teaspoons cumin
  • 1 1/2 teaspoons salt (or more)
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon pepper
  • 1 tablespoon oil (for the Instant Pot)

Instructions

Slow Cooker

  1. Add all the ingredients to the slow cooker. Stir to mix well.
  2. Cook HIGH 3-4 hours, LOW 6-8.

Instant Pot

  1. Turn on the pressure cooker and select sauté. Once hot add oil to the pot. Add the beef to the pot and sear until browned evenly on all sides. You may need to do this in batches. Remove beef from the pressure cooker and set aside. Drain grease if needed.
  2. Add the bell pepper & onion and cook until soft, approximately 3-5 minutes. Add the garlic and cook an additional minute. Turn off the pressure cooker.
  3. Pour in the beef broth. If needed, deglaze the bottom of the pressure cooker by scraping all the bits off with a wooden spoon.  Add the beef back to the pot along with all the remaining ingredients. Stir in to mix well.
  4. Close lid and seal valve. Set high pressure and cook for 25 minutes. When cooking time is  complete, quick release the pressure.
