{VIDEO} Slow Cooker Salsa Verde Chicken Casserole

Ingredients

  • 8 tortillas
  • 2 cups shredded cheese
  • 2 pounds cooked chicken, shredded or chopped
  • 2 cups of salsa verde
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1/3 cup fresh cilantro, chopped

Instructions

Slow Cooker

  1. In a large bowl, mix together cooked chicken, salsa verde, salt, cumin, paprika, and pepper.
  2. Spray the slow cooker generously with cooking spray. Add 2 of the tortillas to the bottom of the slow cooker. You may need to overlap them in the middle to make them fit. Spread 1/3 of salsa verde chicken mixture on top of the tortillas. Top 1/3 of the cheese.
  3. Repeat layers: add another 2 tortillas, 1/3 of the salsa verde chicken, and another 1/3 of the cheese.
  4. Top the the last 2 tortillas, the remaining 1/3 of salsa verde chicken, and then the remaining 1/3 cheese.
  5. Cook HIGH 2-3 hours or LOW 4-6.
  6. Garnish with fresh cilantro.

Bake

  1. Preheat oven to 375 degrees. Spray a 8×8 baking dish with cooking spray.
  2. In a large bowl, mix together cooked chicken, salsa verde, salt, cumin, paprika, and pepper.
  3. Add 2 of the tortillas to the bottom of the baking dish. You may need to overlap them in the middle to make them fit. Spread 1/3 of salsa verde chicken mixture on top of the tortillas. Top 1/3 of the cheese.
  4. Repeat layers: add another 2 tortillas, 1/3 of the salsa verde chicken, and another 1/3 of the cheese.
  5. Top the the last 2 tortillas, the remaining 1/3 of salsa verde chicken, and then the remaining 1/3 cheese.
  6. Bake for 30 minutes or until cheese is bubbling & starting to brown.
  7. Garnish with fresh cilantro.
