Slow cooker shredded beef is a versatile, flavor-packed shredded beef that you can serve many different ways. Beef roast slow cooks in broth with simple dried seasonings until falling apart tender. This crockpot shredded beef is a family-friendly dish that’s perfect for weeknight dinners, meal prep, or holiday gatherings where you need something easy yet impressive. Ingredients

  • 3 pounds beef roast
  • 1 cup low-sodium beef broth
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 1/2 teaspoons salt (or more)
  • 1 teaspoons dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon pepper
  • 1 tablespoon oil of your choice
  • salt & pepper

Instructions

Slow Cooker

  1. Season the beef generously with salt and pepper. Heat the oil to a large skillet over medium-high heat. Add the beef roast and sear a few minutes each side.
  2. Pour the broth into the slow cooker. Add the seasonings and stir to mix well.
  3. Add the seared beef roast.
  4. Cook on HIGH for 4 to 5 hours or LOW 8-9.
  5. Using 2 forks, shred the meat directly in the slow cooker OR remove the beef, shred it and add it back to the slow cooker.

Instant Pot

  1. Season the beef generously with salt and pepper. Turn the pressure cooker to sauté. Once hot, add the oil and beef. Sear the beef a few minutes on both sides. Remove roast from the pressure cooker and set aside. 
  2. Pour in the beef broth and deglaze the bottom of the pressure cooker by scraping all the bits off with a wooden spoon. Stir in all the seasonings. Add the roast back to the pot.
  3. Close the lid and seal valve. Set high pressure and cook for 60 minutes. When the cooking time is complete, let the release naturally for 10 minutes then quick release any remaining pressure.
  4. Using 2 forks, shred the meat directly in the slow cooker OR remove the beef, shred it and add it back to the Instant Pot.

Notes

You will know the beef is done when it is so tender that it shreds easily with a fork.
