Slow Cooker Spicy Turkey Slaw

Slow cooker spicy turkey slaw combines ground turkey, coleslaw, and your favorite vegetables.  This is an easy & healthy recipe that can be served any night of the week. Instructions to make this low-carb, paleo, and Whole30 compatible meal in the Instant Pot are also included.

Ingredients

  • 2 pounds ground turkey, seasoned with salt & pepper
  • 2 16-ounces bags of pre-packaged coleslaw
  • 1/2 cup onion, diced
  • 1 bell pepper, diced
  • 2 garlic cloves, minced
  • 1 tablespoon dried thyme or another dried herb
  • 1 1/2 teaspoons salt
  • 1 teaspoon paprika
  • 1/2 teaspoon pepper
  • 1 cup low-sodium chicken broth
  • 1/2 cup hot sauce
  • 1 tablespoon oil

Instructions

Slow Cooker

  1. Spray the slow cooker with cooking spray. Add the coleslaw.
  2. Heat oil large skillet over medium-high heat. Add the ground turkey. Cook the turkey, crumbling the meat as it cooks, until it is no longer pink. Drain grease and add the meat to the slow cooker.
  3. Add all ingredients to the slow cooker. Stir to mix well.
  4. Cook HIGH 2-3 hours or LOW 4-6. Stir & serve.

Instant Pot

  1. Turn on the pressure cooker and select sauté. Once hot, add the oil, ground turkey, onion, and bell pepper. Cook 5-7 minutes, crumbling the meat as it cooks. Add the garlic and cook an additional minute. Turn off the pressure cooker and drain the grease if you need to.
  2. Add the broth and hot sauce and deglaze the bottom of the pressure cooker by scraping all the bits off with a wooden spoon. Add coleslaw on top. Do not stir.
  3. Close lid and seal valve. Set manual high pressure to 0 minutes. If you do not have 0 (as in zero) as an option, set to 1 minutes. When cooking time is complete, quick release the pressure.
  4. Stir & serve.
