Ingredients

Units Scale

Meatballs

  • 1 pound ground turkey
  • 1 cup dry stuffing mix
  • 1 celery rib, very finely diced
  • 1 large egg
  • 1 teaspoon dried parsley
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried poultry seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon oil (for frying)

Gravy

  • 4 cups low-sodium chicken broth
  • 1/3 cup cornstarch or arrowroot starch
  • 2 teaspoons onion powder
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Pour the broth into the slow cooker. Add the gravy seasonings. Mix until well blended.
  2. Add the ground turkey, stuffing mix, celery, egg, parsley, onion powder, garlic powder, poultry seasoning, salt, and pepper to a large bowl. Mix until the ingredients are just combined. Do not overwork the meat because that can make the meatballs dense. Form the mixture into 12 to 15 evenly sized meatballs.
  3. Add the oil to a large skillet over medium heat. Once hot, add the meatballs, working in batches of about 8. Cook the meatballs until slightly browned on all sides.
  4. Add the turkey meatballs to the slow cooker.
  5. Cook on HIGH for 2 to 3 hours or LOW 4 to 6. The meatballs are done when they reach an internal temperature of 165°F.
  6. Remove the meatballs temporarily or gently move them to one side of the slow cooker. Whisk in the cornstarch until smooth.
  7. Return the meatballs to the gravy and keep them warm in the slow cooker until you are ready to serve.
