Strawberry Shortcake Overnight Oats (Vegan)

We’ve all had those busy mornings where we don’t have the time to make breakfast but we still want a healthy start to the day. If you need to grab something quick and easy to eat that can even be made to go with you as you walk out the door, then you need overnight oats.

What Are Overnight Oats

Overnight oats are a delicious and hearty breakfast option that can easily be made ahead so you can grab and go when you’re in a hurry. The best part is that overnight oats can be completely customized any way you like using your favorite ingredients, and maybe even some new ones you wouldn’t have thought to try. I know you are going to be blown away at how great these strawberry shortcake overnight oats taste for how little effort they take! Overnight oats are an easy and filling breakfast dish made by cold soaking oatmeal in some sort of liquid milk for an extended period of time (usually overnight, hence the name!) with other desired toppings like fruits and nuts. I made this version of overnight oats vegan by using coconut milk and maple syrup. You can substitute your preferred nut milk for the coconut milk or if you’re not worried about this being vegan you can use regular milk.

Is Oatmeal Healthy

Oatmeal can be a particularly good breakfast for you if you are careful about what ingredients you add to it. Sticking to natural and whole ingredients like fruits and nuts when prepping your oatmeal will make sure you are making healthy meal choices. It is when you add unhealthy ingredients, like too much sugar or honey, that oatmeal becomes unhealthy. It is easy to cut back on the sugar when making oatmeal at home instead of buying the premade packages because those are packed with unnecessary sugars. Instead of sugar to sweeten your oatmeal, use spices, like cinnamon or nutmeg, or fruits, like strawberries and blueberries, and you might even notice that you don’t feel like you have to put much sweetener in at all. Regular unsweetened oats have about a gram of sugar per serving to start with, so keeping most of your added sugars to pieces of fruit will make this a healthy breakfast for you and your family. Another great benefit of oatmeal is its 40 grams of whole grains per serving, which is most of the recommended 48 grams per day. These whole grains will help you feel full for longer, so you don’t get that afternoon hunger slump right before lunch. Whole grains are also known to help you lower your risk for heart disease, adult diabetes, and certain types of cancer and other health problems. Oatmeal also boast a healthy four grams of fiber per serving, which helps with digestion and can even help manage blood sugar levels!

Storing Overnight Oats

I recommend that you prep your overnight oats in whatever container you are going to store them in. If you try to combine all the ingredients then portion them out into separate containers, you are adding extra time and clean up to your meal. Even if you want to make one big batch, it will be easier and there will be less clean up if you make them individually. The best way to store your prepped overnight oats is in an airtight container in the refrigerator. I always recommend small glass jars, like mason jars, since they are so easy to use, wash, and reuse. I can also count on my glass jars not to accidentally leak all over my lunch bag when I have to grab one in a rush as I head out the door. I would not recommend freezing your overnight oats because they do not thaw very well.

By far, my favorite recipe of overnight oats. I love the sweetness of maple syrup and strawberries yet it’s not overly sweet. This will be my go to recipe a few times a week for breakfast. So yummy! Thank you!

This was so good! My only complaint is that the recipe should probably be doubled even to feed one person. I will make this again but I will make more next time. Definitely a keeper, thank you!
