Slow Cooker Teriyaki Beef Slaw

Slow cooker teriyaki beef slaw is an easy recipe that’s full of flavor. Chunks of beef, packaged coleslaw and a homemade, sugar-free teriyaki sauce slow cook together. Instructions to make this low-carb, paleo, and Whole30 compatible beef dish in the Instant Pot are also included.

Ingredients

  • 1 1/2 pounds beef flank steak or sirloin, sliced into 2-inch pieces
  • 16 ounces packaged coleslaw
  • 1 tablespoon oil (for Instant Pot)
Teriyaki Sauce
  • 1/2 cup coconut aminos or (low-sodium soy sauce)
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 garlic clove, minced
  • 1 1/2 teaspoon honey or preferred sugar (optional)

Instructions

Slow Cooker

  1. Add beef to the slow cooker.
  2. In a small bowl, mix together teriyaki sauce ingredients. Pour sauce on top of beef. Stir to mix well.
  3. Cook HIGH 2-3 hours or LOW 4-6.
  4. Stir in coleslaw. Cook an additional 15-30 minutes or until coleslaw has softened to your liking.

Instant Pot

  1. Turn on the pressure cooker and select sauté. Once hot, add oil to the pot. Add the beef and cook until browned, 3-5 minutes. Remove beef and set aside. Turn off the Instant Pot.
  2. In a small bowl, mix together teriyaki sauce ingredients. Pour the sauce into the pressure cooker and deglaze the bottom by scraping all the bits off with a wooden spoon.
  3. Add beef back to the Instant Pot. Stir to mix well. Add coleslaw on top. Do not stir.
  4. Close lid and seal valve. Set manual high pressure to 0 minutes. Yes, 0 as in zero cook time.
  5. When cook time is up, quick release the pressure. Stir & serve.
