These pumpkin spiced sweet potatoes will have your kitchen smelling amazing! Paleo, vegan, & whole30 compliant, this healthy side dish can be made in your slow cooker or Instant Pot.
Add sweet potatoes, onion,
bell pepper, garlic,
pumpkin pie spice, salt, pepper, and broth to the slow cooker. Stir to mix well. Add ghee coconut oil on top.
Add broth and the potatoes to the pressure cooker.Close lid and seal valve. Cook high pressure for 3 minutes. When cook time is done, quick release the pressure.
Remove the potatoes & drain the liquid. Turn the pressure cooker on to sauté – low. Add ghee or coconut oil. Once melted, stir in pumpkin pie spice, salt and pepper. Add potatoes and toss until evenly coated.
