SLOW COOKER/INSTANT POT

CHICKEN AND VEGGIES

Ingredients

Boneless Chicken Breast Bell Pepper | Onion | Carrots Broccoli | Sesame Oil SAUCE Coconut Aminos | Water Rice Vinegar | Garlic Cloves Ginger | Arrowroot Starch Powder  

Add all the ingredients except the broccoli to the slow cooker. Stir to mix well. Cook HIGH 2-3 hours or LOW 4-6.

SLOW COOKER

Add broccoli and cook an additional 30 minutes.

Sauté onion, and bell pepper 3-5 minutes or until veggies are soft.   Add garlic and cook an additional minute. Turn off the pressure cooker.

INSTANT POT

Add chicken, coconut aminos, water, rice vinegar, bell peppers, onion, carrots, ginger, salt, and pepper to the Instant Pot. Stir to mix well.

Cook on high pressure for 5 minutes.  Stir starch and water mixture into the Instant Pot along with the broccoli. Cook 5-10 minutes until thickened. 

SERVE

Serve with cauliflower rice to keep it low carb or serve with white or brown rice.
