  • French Bread
  • Banana
  • Blueberries
  • Eggs
  • Milk Of Your Choice
  • Maple Syrup or Honey
  • Vanilla Extract
  • Cinnamon

How To Make Banana Blueberry French Toast In The Slow Cooker

Slow Cooker

  1. Spray the slow cooker generously with cooking spray.
  2. Add the cubed French bread to the slow cooker. Top with the sliced banana and the blueberries.
  3. In a small bowl, whisk together the eggs, milk, mashed banana, vanilla, cinnamon, and your preferred sweetener. Pour the mixture over the bread in the slow cooker.
  4. Cook HIGH 2-3 hours or LOW 4-6.  Let the French toast cool before removing the slow cooker.

FAQs & Tips

What type of bread should you use? 

I suggest you use a a sturdy bread like becuase it will hold up well during the long cooking process without becoming too soggy. Peronaly, I like to use French bread for this slow cooker breakfast recipe. In addition to French bread, other suggestions include brioche, or challad bread. Fresh bread is not preferred. Day-old stale bread works best when making a crockpot French toast casserole. 

Can you use a slow cooker liner?

Yes! This is a great recipe for a liner. Otherwise, be sure to spray the inside of the slow cooker generously before adding the food. This will help prevent it fom sticking to the slow cooker.

Will the liquid cover all the food? Should it food fully submerged? 

The bread mixture will not be fully submersed in the liquid mixture. That’s okay. Just make sure all the bread pieces are wet. I did that by pressing the bread down lightly with a fork after pouring the egg/milk mixture in.

How do you know when it’s done? 

Check the French toast towards the end of the cooking time to prevent it from overcooking. This will look like a fluffy bread pudding-souffle. It should brown nicely, especially around the edges. You’ll know it’s done when you stick a knife in the middle and it comes out clean. Mine takes the full 6 hours on low but my 3.5 quart slow cooker heats on the low end. It all depends on your slow cooker.

How do you serve this?

This crockpot French toast casserole recipe is best served warm. Garnish with your favorite toppings like syrup, powdered sugar, nuts, fresh fruit, or whipped cream.

How do you store leftovers?

Store leftover slow cooker banana blueberry French toast in the refrigerator for up to 4 days. 

What size slow cooker did I use?

I use a 3.5-quart slow cooker for this recipe. Feeding a larger crowd? Double the recipe and use a larger slow cooker.

  • 2 cups milk of your choice
  • 2 ounces blueberries
