Ingredients
STEW: diced tomatoes tomato paste onion celery stalks bell pepper broth or stock garlic Italian seasoning salt & pepper red pepper flakes bay leaf
fresh seafood oil parsley
SLOW COOKER
Add STEW ingredients to the slow cooker. Cook on HIGH for 2-3 hours or LOW for 4-6 hours.
Rinse seafood. Add seafood to the slow cooker and cook and additional 15-30 minutes. Remove bay leaf before serving. Garnish with fresh parsley if using.
Rinse seafood & select sauté on instant pot. Once hot add the oil, onion, celery & bell pepper. Cook approx. 3-5 minutes. Add garlic and cook an additional minute.
INSTANT POT
Stir in remaining STEW ingredients. Set high pressure & cook for 20 minutes. Stir & set to sauté. Once bubbling add rinsed seafood. Cook for a few minutes then serve.
Cioppino is usually served with crusty, charred bread. For a keto-friendly alternative, it can also be served with cauliflower rice or even zoodles.
