SLOW COOKER
Season the pork with salt & pepper. Place it on the bottom of the slow cooker. Prepare the mojo and pour it on top of the pork. Cook on high 4-5 hours. Remove pork from cooker & shred.
Sear the pork in the Instant Pot on both sides, then remove. Pour the mojo into the pot and deglaze by scraping bits off with a wooden spoon. Add pork back to pot.

Close lid and seal valve. Set on high pressure & cook for 15 minutes per pound of pork. Let pressure release naturally. Remove pork from pot & shred.
TOP TIPS
Broil the pork on a baking sheet before or after shredding if using a slow cooker.
I use shredder claws to shred my pork. I suggest pouring more sauce on top before serving.
