Using just a few ingredients, this baked shrimp boil casserole is a family friendly meal that can be served any day of the week.

Ingredients For A Shrimp Boil Casserole

  • Shrimp: 1 pounds of shrimp. This can be shell-on, peeled, tail-on, tail off, etc. 
  • Old Bay Seasoning: Old bay seasoning for the casserole and some more to season the shrimp.  
  • Smoked Sausage: Your preferred smoked or cooked sausage. Use an andouille sausage for more flavor.
  • Potatoes: 1 pound of red potatoes, chopped or cut in half depending on the size. 
  • Corn: 15 ounces canned corn, drained & rinsed.
  • Onion: One small onion, diced.
  • Lemon: One small lemon

How To Make A Baked Shrimp Boil Casserole

Baking a shrimp boil is very easy. There is no boiling. Instead, the shrimp boil is made as a casserole and baked in the oven.  

  1. Preheat oven to 375 degrees.
  2. Spray a casserole dish with cooking spray.
  3. Add the following ingredients to the bottom of the casserole dish in this order: red potatoes, sausage, onion, corn.
  4. In a small bowl, melt the butter. Add the garlic powder and 3 teaspoons of Old Bay. Stir to mix well. Pour the mixture evenly over the food.
  5. Cover with foil and cook 30-40 minutes or until the potatoes are tender.
  6. Season the shrimp with the oil and 2 teaspoons of Old Bay. Remove the foil and add the seasoned shrimp on top of the food. Cook uncovered 10-15 minutes or until shrimp are cooked through.

What Is A Shrimp Boil?

You will find seafood boils throughout the South, with different regions having their own unique spin. For example out of the Carolinas there’s low-country boils. In Louisiana you’ll find more crawfish boils. A shrimp boil is a one-pot recipe consisting of shrimp, potatoes, sausage, and corn. This recipe is adapted from generic shrimp boil recipe. 

Do you have to use andouille sausage?

Nope! You can use any smoked sausage.

How do you store leftovers?

Store leftover baked shrimp boil in airtight container in the refrigerator for up to 4 days.

  • 1 pound shrimp, deveined
  • 1 pound red potatoes, chopped or sliced depending on the size
  • 14 ounces Andouille sausage, sliced into 1-inch rounds
  • 1 small onion, diced
  • 15 ounces corn, drained & rinsed
  • 3 teaspoons + 2 teaspoons Old Bay Seasoning
  • 1 teaspoon garlic powder
  • 1/2 cup butter, melted
  • 1 tablespoon oil

Instructions

  1. Preheat oven to 375 degrees
