How To Make Slow Cooker Pork Roast
Prep The Pork
In a small bowl, mix together the thyme, rosemary, garlic powder, onion powder, salt, and pepper. Rub the seasoning evenly all over the pork on all sides.
Slow Cooker
Optional step – Heat oil in a large skillet over medium-high heat. Once hot, add the prepared pork (see above) and cook a few minutes on both sides until browned.
- Add the potatoes, carrots, and onion to the slow cooker. Pour the broth on top. Add the prepared, seasoned pork roast on top of the food.
- Cook HIGH 4-5 hours or LOW 8-9.
- Remove the pork from slow cooker. Shred the meat and place back into the slow cooker until ready to serve.

- Turn the Instant Pot to sauté. Once hot, add the oil and the prepared pork. Cook 3-5 minutes on each side or until the pork is browned. You may need to cut the pork to make the meat fit.
- Remove pork from the Instant Pot. Pour in the broth and deglaze the bottom of the pressure cooker by scraping the bits off with a wooden spoon.
- Add the pork back to the pot.
- Close lid and seal valve. Set high pressure and cook 20 minutes per pound of pork. When cooking time is complete, quick release the pressure. Add the potatoes, onion, and carrots.
- Close lid and seal valve. Set high pressure and cook 3 minutes. When cooking time is complete, let the pressure release naturally.


What Type Of Pork To Use
This crockpot pork roast recipe is best made with pork shoulder or pork butt. What’s the difference between the two? Both cuts are from the shoulder of the pig but pork butt (aka Boston butt) is located higher up while pork shoulder (aka picnic shoulder/roast) is farther down. Should you use a boneless or bone-in cut of pork? What you see here in the pics is boneless pork shoulder. In the past I used bone-in. Both work fine with the recipe so chalk it up to personal preference.

What Type Of Potatoes To Use
In short, use whatever type of potato you want. What you see in this pictures is peeled and chopped russet potatoes. If you use a non-waxy potato like russet, cut the potatoes into larger chunks than you usually would. This will help them hold their shape during the cooking process and not turn to mush. Other suggestions include waxy potatoes like red potatoes, yellow potatoes, baby potatoes, fingerlings, or even sweet potatoes.

FAQs & Tips
- Once the cooking time is up, the pork should be fork-tender and easily shred with a fork. Carefully remove the pork from the crockpot and place it on a cutting board. Let the meat rest for a few minutes before shredding it using two forks. Return the shredded pork to the crockpot and mix it with the cooking juices and vegetables.
- Store leftovers in the refrigerator for up to 4 days.
