FAQs & Tips

What type of beef should you use?

Beef stew meat is my go-to. Other suggestions include beef sirloin or a beef roast cut into chunks. Cut the beef into even-sized chunks so everything cooks evenly.

What is the cornstarch / arrow root starch  for?

The starch serves as a thickening agent for the gravy.

Can you use flour as a thickening agent?

Unfortunately, I have not made this recipe using flour. Having not tried it, I do not recommend using flour.

Is this heathy?

The recipe is low-carb and keto friendly. If you use arrow root starch in place of cornstarch, it is also paleo, and Whole0 compatible. Other ways to make this healthy will depend on how you serve it. To lighten up this comfort food, I suggest serving this over mashed cauliflower or zucchini noodles.

What is the gravy is full of clumps when it’s done cooking?

If your gravy is clumpy when it’s done cooking, simply give the gravy a good stir. The clumps will disappear.

How do you serve this?

I like to serve this over mashed potatoes. Other suggestions include over rice or pasta.

How do you store leftovers?

Store leftover crockpot beef tips & gravy in the refrigerator for up to 4 days.

What size slow cooker did you use?

I use a  6-quart slow cooker or Instant Pot for this recipe.
