What is the arrowroot/cornstarch for?
The starch serves as a thickening agent for the gravy.
Can you use flour as a thickening agent?
Unfortunately, I have not made this recipe using flour. Having not tried it, I still do not recommend using flour unless you make a roux separately. Starches similar to cornstarch like arrowroot starch or potato starch will work though. For this recipe to be paleo and Whole30 friendly, I recommend using arrowroot starch.
Is this healthy?
Depends on who you ask. This crockpot chicken and gravy recipe is paleo and Whole30 compatible. Unlike other versions, there is no canned cream of soup and high-sodium packets of gravy.
What is the gravy is full of clumps when it’s done cooking?
Don’t worry, this happened to me as well. If your gravy is clumpy when it’s done cooking, simply give the gravy a good stir. The clumps will disappear.
How do you serve chicken and gravy?

Finally a healthy chicken gravy recipe! I have looked high and low for a recipe that’s didn’t contain chemical cream of soup or packets of sodium. I followed the recipe to a T. My husband and me both loved it. This will be made again and again!
This is a good recipe. I added bell peppers and onions. My gravy was clumpy but the clumps went away when I stirred with a egg whisk. Next time I will double the recipe as this made a smaller batch than what I needed.
