Ingredients

  • 4 chicken leg quarters (approximately 2 to 2 1/2 pounds)
  • 1 tablespoon oil
  • 1 tablespoon dried parsley
  • 1 1/2 teaspoons salt (or more)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon pepper
  • 1 cup of broth (for the Instant Pot only)

Instructions

Slow Cooker

  1.  In a small bowl, mix together all the seasonings. Pour the oil on top of the chicken and then the seasonings. Toss until the chicken is coated evenly on all sides.
  2. Spray the slow cooker with cooking spray. Add the seasoned chicken leg quarters. It’s okay if they overlap.
  3. Cook on HIGH for 3 to 4 hours to LOW 6 to 8.

Instant Pot

  1. Pour the broth into the Instant Pot.
  2. In a small bowl, mix together all the seasonings. Place the trivet in the Instant Pot. If you do not have a trivet, you can add the chicken directly to the broth.
  3. Pour the oil on top of the chicken and then the seasonings. Toss until the chicken is coated evenly on all sides. Add the chicken on top of the trivet.
  4. Close lid and seal valve. Set high pressure and cook for 15 minutes. When cooking time is complete, let the pressure release naturally for 5 minutes, then quick release any remaining pressure.
