This crockpot soul food dinner is a one-pot meal that’s packed with flavor…and soul! Chicken thighs, greens, and sweet potatoes cook together in this easy slow cooker recipe. Using simple ingredients, this soul food platter will impress your guests! Instructions to make this one-pot chicken recipe in the Instant Pot are also included.

Ingredients

  • 2 pounds chicken thighs
  • 16 ounces greens
  • 1 1/2 pounds sweet potatoes, peeled & sliced into 1/2-inch rounds
  • 1 cup chicken broth
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons paprika
  • 1 1/2 teaspoons dried thyme
  • 1 1/2 teaspoons salt (or more)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper

Instructions

Slow Cooker

  1. In a small bowl, mix together the seasoning ingredients. Spray the slow cooker with cooking spray. Add the chicken thighs. Add the spices & mix until all the chicken is well seasoned. If you want, save a bit of the seasoning for the sweet potatoes.
  2. Add the greens on top of the seasoned chicken. Add the garlic. Pour the apple cider vinegar and chicken broth on top.
  3. Add the sweet potatoes on top of the greens.
  4. Cook HIGH 3-4 hours or LOW 6-8.

Instant Pot

  1. Pour the cup of chicken broth into the Instant Pot.
  2. In a small bowl, mix together the seasonings. Season the chicken with the seasonings and add to the pot.
  3. Add the sweet potatoes on top of the chicken. Close lid and seal valve. Set high pressure and cook for 8 to 10 minutes (8 minutes for boneless thighs, 10 minutes for bone-in).
  4. When cooking time is complete, quick release the pressure. Using tongs (they will be hot), remove the sweet potatoes and the chicken. Add the greens.
  5. Close lid and seal valve. Set high pressure and cook 5 minutes. When cooking time is complete, quick release the pressure.
